072 Paleo Pancake Recipe


*** 1 x Pancake ***


Ingredients:

1 x Banana

2 x Medium eggs

1/2 Cup of berries

1/2 Cup sliced almonds


Method:


1. Peel the banana and tear into chunks then place into a medium bowl. With a fork mash through the banana chunks until a paste like consistency.


2. Crack both eggs into the bowl with banana paste, mix together until both have combined.


3. Add sliced almonds into egg and banana mixture and stir together.


3. Pre-heat a pan and add a teaspoon of extra virgin coconut oil.


4. Once the pan is hot add the egg, banana and almond mixture. At this point tilt the pan to allow for full coverage, then leave to cook for at least 1minute.


5. Once you get a slight browning around the edges it is time to flip the pancake.


6. When the pancake is fully cooked, remove from pan and sprinkle on your berries, at this point for taste you can also add a small amount of honey and cinnamon.
