Cyclists Snack - Flapjack
Cycling is an extremely popular sport, a fantastic way to explore your local area (there is nothing better than getting out on a summers evening in the beautiful Cotswolds) and a brilliant way to make new friends, within Cirencester alone there are two brilliant clubs (Ride 24/7 and Performance Cycles in Poulton) both offer something for every abilities.
We all know how much cyclists love a good flapjack, so heres our take on the high carb oat bar, but remember these are still rather high in calories so only consume as a pre/post workout high carb treat.
Ingredients:
325g Rolled Oats
25g Corn Flakes
1 Tbsp Butter
2 Tbsp Coconut Oil
1 Tbsp Dark Sugar
75g Golden Syrup
1 Lemon + Zest
1 Pinch Ground Cinnamon
1 Pinch Ground Ginger
150g Sultanas
Method:
Preheat your oven to 170"C
Put the coconut oil, golden syrup, butter, sugar, lemon zest and juice into a small pan over a low heat and stir until they come together.
Tip the remaining ingredients into a large bowl and pour the golden syrup mixture over the top, mixing everything together well with a wooden spoon.
Line a baking tray with parchment paper and spread the mixture over the base. Lay a second piece of parchment paper over the top and then cover the flapjacks with tin foil and bake for 15 minutes.
Remove the tin foil and parchment from the top and bake for a further 10 minutes. Remove from the oven and allow to cool before chopping up into thick chunks.
