007.3 Cirencester personal trainer | paleo pancake

With it being shrove Tuesday (pancake day) here in the UK it would only be right to share my favourite healthy pancake recipe.


Paleo Pancake Recipe

1-2 x Pancakes

Ingredients:

1 x Banana

2 x Medium eggs

1/2 Cup of berries

1 x tbsp rolled oats

Method:

1. Peel banana and tear into chunks, place into a medium bowl. With a fork mash through the banana chunks until a paste like consistencey.

2. Crack both eggs into the bowl with banana paste, mix togther until both have combined.

3. Add oats into egg and banana mixture and stir togther.

4. Pre-heat a pan and add a teaspoon of extra vigin coconut oil.

5. Once the pan is hot add the egg, banana and oat mixture. At this point tilt the pan to allow for full coverage, then leave to cook for at least 1minute.

6. Once you get a slight browning around the edges it is time to flip the pancake.

7. When the pancake is fully cooked, remove from pan and sprinkle on your berries, at this point for taste you can also add a small amount of honey.
